Blondies - Murphy style

Ingredients:
Dry mix: 2 c flour, 2 c oats (quick oats), 2 tsp baking powder, 1 tsp salt

Cream together: 2 c sugar, 1 1/3 c butter, 2 eggs, 3 tbs milk, 2 tsp vanilla

12 oz choc chips


Directions:
To creamed ingredients add dry mix 1/4 at a time. Mix in choc chips. spread over a greased pan. Spread should be around 1/4 inch deep in pan. Bake at 350 deg. for 25-35 min. Cool, cut and munch.

You can use steel cut oats or old fashioned oats in lieu of quick oats for added nutritional value, but they may take longer to cook and will be more chewy.

Kelaguen - Murphy Style

Good Guamanian dish served as appetizer or as main course. Could use hot chile pepper or jalapeƱo.


Ingredients

  • 1 (2-3 lb) roasted whole chicken, diced in small cubes
  • 3 green onions, diced
  • 2 lemons, juiced
  • 4-6 limes, juiced (don't make dish soupy)
  • 1 grated fresh coconut (~1 cup) (chop in food processor)
  • 1 roasted habanero pepper, minced
  • Salt, to taste (less if store roasted chicken)

20-30, small flour tortillas (whole wheat) OR whole grain crackers

Directions

  1. In a bowl combine the chicken, green onions, lemon & lime juice, coconut, and hot pepper(s). Chill for at least one hour.
  2. Serve wrapped open-burrito style in tortillas or on crackers.
