It is very important to chop any ingredients to a uniform size for even cooking. If you don't then bits will start to brown or burn while larger pieces aren't yet tender. Here is a short 1 minute video on how to chop an onion easily and maintain uniformity.

That was a great video Matt, very instructive and helpful. Your video is very clear, the pace is perfect, and you have a great didactic style. I don’t normally cook and any new suggestion or technique about doing a better job in the kitchen is very welcome.
ReplyDeleteI also learned in a cooking class once that if you run the freshly cut part of the onion under water, it makes you "cry" less...dunno if that is true or not, but thought I'd pass it along FWIW...
